40 Clove Chicken Filice

Ingredients:

8-10 Chicken thighs or
-drumsticks
40 Cloves fresh garlic,
-unpeeled
3/4 c Chicken stock
1/2 c Olive oil
1 Green capsicum, seeded,
-deveined & diced
1 Red capsicum, seeded,
-deveined & diced
1 ts Thyme
1 ts Oregano
2 ts Dried basil
6 Sprigs minced parsley
1 Lemon
Salt and pepper to taste


Instructions:

courtesy of Val and Elsie Filice, Gilroy CA [yes, home of the garlic festival Gilroy!] "To enjoy the dish fully, pull out a hot, juicy garlic clove, hold one end and squeeze it into your mouth, discarding the skin." Place chicken pieces into shallow baking pan, skin side up. Sprinkle all ingredients evenly over top of chicken. Squeeze juice from lemon and pour over top. Cover with foil and bake at 375F for 40 minutes. Remove foil and bake uncovered an additional 15 minutes. Rosemary tastes good in this too, if you're not into oregano. This is a recipe that can be messed with to your heart's content. Liz's note: (Cook in crockpot on Low/Auto 6-8 hours).
