Antoinette s Fruit CakeCuisine: Cakes Category: Cakes Servings: 1 Ingredients:5 c Fruit cake mix (purchased-in packet like sultanas -or raisons) 1 c Brown sugar 100 g Margarine or butter 1 ts Bicarbonate of soda 1 c Boiling water Instructions:Boil above ingredients together for 10 minutes in a closed pot. Allow to cool then add: 2 Eggs 1 ts Vanilla essence 1 ts Almond essence Mix well, sift together and add: 2 c Flour 1 ts Mixed spice 2 ts Baking powder 1/2 c Brandy Put in round (9 inch) tin and bake for 1 1/2 - 2 hours 150C (300F).
